Brewer Profile: Callsign Brewing

On March 15, 2017 by KC Nanobrews
Your name(s): Steve Sirois
Your brewery’s name:
Callsign Brewing
Location: North Kansas City, MO
Number of years participating in the Festival?
5th year this year
When did you start brewing? What got you brewing? How frequently do you brew?
Started brewing Spring of 2011. I got a 1 gal beer brewing kit for Fathers day, from Williams Sonoma, and after that I started to buy brewing equipment for a 5 gal system. I attempt to brew once every other month.
Describe your brew system.
My current system is a 1.5 barrel, all electric, 3 pot system and 4 food grade plastic conical fermentors with glycol cooling.
How did you come up with your brewery’s name? Being 21 years military at the time, in 2013 an US Air Force KC-135 Tanker aircraft crashed while deployed. I did NOT know this crew, how ever I had some time on the very same aircraft that crashed. I was preparing for an event and I didn’t have a name for myself or my beer. A brewing partner and I decided to name the beer after the aircrafts callsign, so “Shell 77 Imperial IPA” was made. My buddy “Morris, or Mo” talked that night we brewed Shell 77 about all the folks we knew that never made it home and gave the ultimate sacrifice to our country. So we decided to name all of our beer after the callsigns of Military Air Craft that were shot down or crashed as a personal tribute to the sacrifices of our men and women in uniform.

What is your favorite style of beer to brew?
Pale Ales, IPA’s, Stouts, Ambers, Reds, Browns. Almost all.
What was your first beer you ever brewed? Did it turn out?
First beer was a 1 gal batch IPA. It went right down the sink, but then I was determined to brew a good beer.

Do you have a homebrew disaster you’d like to share?
I’ve brewed a lot of beer, and if you don’t have a disaster now and then when you were new, you weren’t learning.

Do you have any homebrew related projects that you’d like to share?
Seems like there is always a new project. From buying bigger equipment, to building an all electric brewing system. Bigger and better fermentors, setting up a 15 gal glycol system to the fermentors. The best was building a 400 sq ft brewery in the basement.
Do you have a favorite homebrew trick or gadget that helps make brewing better/easier?
I’m always trying new things, but I like to learn from others, and expand my abilities with known and proven ways. I’m not much on recreating the wheel.

Have you won any awards/competitions?
What is the best prize you won?
We earned 2 place with our “Bravo 12 Oatmeal Stout”
Do you have any plans to go pro? When? Where?
I am going pro, and if all goes right, I should be open in Fall of 2018. It will be at 1447 Gentry St, N. Kansas City MO

Anything else you’d like to share?
Over the last 5 years, I had an overwhelming amount of support from ALOT of people. A lot of support from most of the local breweries in the KC area. I, alone won’t make the dream of Callsign Brewing happen, but thank you for all of those that pushed me in the right direction.
